Improving Awareness on Edible Insects through Dietary Education Based on Health Belief Model

Abstract
Purpose: This study was conducted to find out the perceptions of edible insects among adults who have not consumed edible insects residing in Korea, and to evaluate the effects of improve awareness through education based on the health belief model.

Methods: A survey was conducted with 182 adults aged 21-64 years who were living in Korea. Data analysis was performed using SPSS Statistics 24. Edible insect eating-related perception and experiences were analyzed using frequency analysis; and chi-square test.

Results: In total, 127 (69.8%, 53 men, women 74) responded that edible insects are emerging as a potential future food sources. The number of participants, being 151 who said that edible insects are likely to have high nutritional value is higher than those who said otherwise. There were 20 men and 51 women who do not consume edible insects due to the insects appearance. A total of 121 (65.9%) participants repoted improved awareness after receiving education on edible insect and 112 (66.5%) responded that it would have a positive effect on its consumption.

Conclusion: Therefore, dietary education program to improve the awareness on edible insects is expected to greatly contribute to the future commercialization and industrialization of edible insect foods in the future.
